Italian Salad with Feta
This chopped romaine salad is a combination of Italian and Greek flavors. It combines crisp lettuce with chickpeas, Genoa salami, olives, and feta cheese in delicious oregano and lemon flavored vinaigrette.
It’s a great side salad to pair with any margherita pasta, whole roasted chicken, or a lighter baked cod with panko. Also, you can easily serve the salad as is with a side of crusty bread.

For the vinaigrette, you’ll need: olive oil, white wine vinegar, dried oregano, fresh garlic, and lemon juice.
Make this Salad in Two-Easy Steps!
Make the vinaigrette: In a bowl or mason jar with a lid, combine the olive oil, vinegar, oregano, garlic, and lemon juice. Season with salt and pepper to taste.
Make the salad: In a large serving bowl, combine the salad ingredients. Drizzle some of the vinaigrette and toss together. Taste and add more vinaigrette and/or salt and pepper.
Tip: After the salad is tossed with the vinaigrette it’s best served immediately. If you want to enjoy this salad throughout the week, simply keep the salad and vinaigrette stored separately until ready to serve.

Ingredients
Vinaigrette
- 3 Tbsp. extra-virgin olive oil
- 2 tsp. white wine vinegar or red wine vinegar
- 1/4 tsp. dried oregano
- 1 clove garlic, minced
- 3 tsp. fresh lemon juice
- Kosher salt and fresh ground pepper
Salad
- 6 cups romaine, roughly chopped
- 1/3 cup canned chickpeas, drained and rinsed
- 1/3 cup diced red bell pepper
- 1/4 cup red onion, thinly sliced
- 1/3 cup crumbled feta cheese
- 1/3 cup Genoa salami, sliced 1/4-inch strips
- 1/3 cup kalamata olives, pitted
Instructions
Vinaigrette
- In a small bowl, whisk all the ingredients until combined. Season with salt and pepper to taste.
Salad
- In a large bowl combine the salad ingredients. Drizzle with vinaigrette and toss until combined. Taste for salt and pepper before serving.
