Italian Salad with Feta

Romaine lettuce with chickpeas, salami, olives, and feta tossed in lemon and oregano flavored vinaigrette. It’s a great salad to serve alongside a main dish or on its own.


Units Scale


  • 3 Tbsp. extra-virgin olive oil
  • 2 tsp. white wine vinegar or red wine vinegar
  • 1/4 tsp. dried oregano
  • 1 clove garlic, minced
  • 3 tsp. fresh lemon juice
  • Kosher salt and fresh ground pepper


  • 6 cups romaine, roughly chopped
  • 1/3 cup canned chickpeas, drained and rinsed
  • 1/3 cup diced red bell pepper
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup crumbled feta cheese
  • 1/3 cup Genoa salami, sliced 1/4-inch strips
  • 1/3 cup kalamata olives, pitted



  1. In a small bowl, whisk all the ingredients until combined. Season with salt and pepper to taste.


  1. In a large bowl combine the salad ingredients. Drizzle with vinaigrette and toss until combined. Taste for salt and pepper before serving.
