Description
Romaine lettuce with chickpeas, salami, olives, and feta tossed in lemon and oregano flavored vinaigrette. It’s a great salad to serve alongside a main dish or on its own.

Vinaigrette
- 3 Tbsp. extra-virgin olive oil
- 2 tsp. white wine vinegar or red wine vinegar
- 1/4 tsp. dried oregano
- 1 clove garlic, minced
- 3 tsp. fresh lemon juice
- Kosher salt and fresh ground pepper
Salad
- 6 cups romaine, roughly chopped
- 1/3 cup canned chickpeas, drained and rinsed
- 1/3 cup diced red bell pepper
- 1/4 cup red onion, thinly sliced
- 1/3 cup crumbled feta cheese
- 1/3 cup Genoa salami, sliced 1/4-inch strips
- 1/3 cup kalamata olives, pitted
Instructions
Vinaigrette
- In a small bowl, whisk all the ingredients until combined. Season with salt and pepper to taste.
Salad
- In a large bowl combine the salad ingredients. Drizzle with vinaigrette and toss until combined. Taste for salt and pepper before serving.
