Expert Tips

Here are some tips and tricks to help you make the best chicken sausage patties.

  • Chop the bacon small. Use a sharp knife and cut the bacon into long strips about 1/2 inch wide. Turn the bacon and cut the strips into pieces also about 1/2 inch wide. 
  • Use only the yolk. Using the whole egg will make the meat mixture too wet and likely the patties will not hold shape. Make sure to only use the yolk part of the egg.
  • Oil your hands. When forming meat into patties, lightly oil the palm of your hands with a little oil. It will help the patties from sticking to your hands.
  • Use a heavy-bottom skillet. A cast-iron skillet is great for cooking breakfast patties, whether you use a pre-seasoned cast-iron skillet or enameled cast-iron skillet, both are great for even cooking and browning.

How to Make Sausage Sheet Pan Dinner 

You can easily turn these sausage patties into a sheet pan meal to serve for dinner or to enjoy through out the week as part of meal prep, similar to our chicken patties with corn succotash recipe.

To do this, place the patties and vegetables of your choice on a baking sheet and bake until the meat and veggies are cooked through at 450F for 20-35 minutes.

Some veggies you can try are Brussel sprouts, butternut squash, sweet potatoes, acorn squash, Yukon potatoes, or bell peppers. Make sure to cut the veggies into uniform size so they cook evenly.

There are so many ways you can serve these little patties.

Add them to your breakfast with crispy rosemary garlic potatoes, asparagus frittata, and your favorite pancakes with syrup, or add them to a hash skillet.

  • 2 slices bacon, chopped
  • 1/2 cup peeled and shredded Granny Smith apple
  • 1 tsp. onion powder
  • 1/4 tsp. dried rosemary
  • 1/2 tsp. dried fennel seeds
  • 3/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1 egg yolk
  • 1 Tbsp. mayonnaise
  • Oil for cooking, such as olive oil or avocado oil

Instructions

  1. To a large bowl, add all of the ingredients. Use your hands to gently mix just until combined. Let the meat mixture rest for about 10 minutes.
  2. Lightly oil the palm of your hands with oil and shape the mixture into 8 (3-inch) patties. It helps to first divide the mixture into eight balls and then press on each ball to form the patties.
  3. Add enough oil to cover the bottom of a large heavy-bottom skillet, such as cast-iron, and heat over medium heat. When the oil is hot, add patties to the pan without overcrowding and cook for 4-6 minutes on each side or until no longer pink and golden brown on the outside. Transfer to a paper towel-lined plate and let rest for 5 minutes before serving.
