Description
Chicken Apple Sausage is a delicious breakfast sausage that you can make right at home. It combines ground chicken with sweet shredded apples for sweet and savory patties.

- 1 lb. ground chicken
- 2 slices bacon, chopped
- 1/2 cup peeled and shredded Granny Smith apple
- 1 tsp. onion powder
- 1/4 tsp. dried rosemary
- 1/2 tsp. dried fennel seeds
- 3/4 tsp. kosher salt
- 1/4 tsp. black pepper
- 1 egg yolk
- 1 Tbsp. mayonnaise
- Oil for cooking, such as olive oil or avocado oil
Instructions
- To a large bowl, add all of the ingredients. Use your hands to gently mix just until combined. Let the meat mixture rest for about 10 minutes.
- Lightly oil the palm of your hands with oil and shape the mixture into 8 (3-inch) patties. It helps to first divide the mixture into eight balls and then press on each ball to form the patties.

Add enough oil to cover the bottom of a large heavy-bottom skillet, such as cast-iron, and heat over medium heat. When the oil is hot, add patties to the pan without overcrowding and cook for 4-6 minutes on each side or until no longer pink and golden brown on the outside. Transfer to a paper towel-lined plate and let rest for 5 minutes before serving.
Notes
- Bacon: Use a sharp knife and cut the bacon into long strips about 1/2 inch wide. Turn the bacon and cut the strips into pieces also about 1/2 inch wide.
- Leftovers: Refrigerate cooked sausage for up to 5 days.
