Spring Chicken Salad
Light spring chicken salad that is all about crisp vegetables and refreshing zesty vinaigrette. It’s made with shredded cooked chicken, cucumbers, radishes, tomatoes, and fresh herbs.

Simple Chicken Salad
Best thing about spring is everything bright and fresh that comes along with it, including salads. And you guys know how much I love my salads!
This spring chicken salad is fresh, light, and so crisp. It combines some of my favs like cucumbers, radishes, and tomatoes with shredded chicken and then tossed in a zesty vinaigrette.
It’s so simple to make and serves well with crusty bread or even better, stuff it into a pita break just like our chicken salad pita. You can make four smaller salads or two bigger salads.
Chicken Salad Ingredients
You’ll need the following ingredients to make spring chicken salad:
- Shredded chicken (make your own or use rotisserie chicken)
- Cucumbers
- Radishes
- Tomatoes
- Cilantro
- Green onions
- Vinaigrette – olive oil, lemon juice, apple cider vinegar, garlic
How to Make Chicken Salad
What I love about this simple chicken salad is that it’s very easy to make, especially if you already have cooked chicken on hand. The rest is just a matter of chopping the veggies and making the vinaigrette.
- Step 1: Make the salad – In a salad bowl, combine the cucumbers, radishes, tomatoes, green onions, cilantro, and chicken. Add the tomatoes at the end if you want them to hold their shape better, especially if using Campari tomatoes, which are delicate.
- Step 2: Make the vinaigrette – In a separate bowl, whisk together the olive oil, lemon juice, apple cider vinegar, and garlic. Season with salt and pepper, to taste.
- Step 3: Combine together – Pour the vinaigrette over the salad and gently toss to combine. Taste for salt and pepper before serving.
How Long Does Chicken Salad Last?
This chicken salad is best when served immediately. You can refrigerate it for 1-2 days, however, the veggies do get a little soft the longer the salad sits.
What to Serve with Chicken Salad?
Just about anything! I find that this salad is great on its own with crusty bread or pita bread.
However, if you want to make it more filling and part of a meal a bowl of veggie soup is always a great side. Try Broccoli Cheddar Soup or Roasted Tomato Basil Soup.

Ingredients
- 3–4 mini cucumbers, cut into matchsticks
- 8–10 radishes, cut into matchsticks
- 5–6 Campari tomatoes, quartered*
- 3 green onions, sliced
- 1/2 cup fresh cilantro, chopped
- 1 cup shredded cooked chicken
- 3 Tbsp. extra-virgin olive oil
- 2 Tbsp. fresh lemon juice
- 2 tsp. apple cider vinegar
- 1 garlic clove, pressed
- Kosher salt and fresh black pepper, to taste
Instructions
- In a salad bowl, combine the cucumbers, radishes, tomatoes, green onions, cilantro, and chicken. You can also add the tomatoes at the end if you want them to hold their shape better, especially if using campari tomatoes (they’re super juicy and delicate).
- In a separate bowl, whisk together the olive oil, lemon juice, apple cider vinegar, and garlic. Season with salt and pepper, to taste.
- Pour the vinaigrette over the salad and toss to combine. Serve immediately.

While this recipe looks good and certainly worth a try, it’s important to note it is for salad with chicken, not chicken salad.
This recipe would be even better with tortilla chips, black beans, avocado, and feta.
