- Red wine vinegar: This can be substituted for apple cider vinegar.

Ingredients
- 8 oz. fusilli, rotini, or penne pasta
- 2 cups cooked chicken breast, diced or shredded
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red bell pepper, diced
- ¼ cup red onion, finely chopped
- ½ cup sliced black olives
- ¼ cup fresh basil, thinly sliced
- ½ cup shredded Parmesan cheese
Dressing
- ½ cup mayonnaise
- ¼ cup plain Greek yogurt
- 2 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 2 cloves garlic, minced
- 1 tsp. Dijon mustard
- Kosher salt and fresh black pepper, to taste
Instructions
- Cook the pasta until al dente in salted water according to the package instructions. Drain and rinse under cold water. Transfer to a large mixing bowl.
- Add chicken, tomatoes, cucumbers, bell pepper, red onion, olives, basil, and Parmesan cheese.
- Whisk together the mayonnaise, Greek yogurt, olive oil, red wine vinegar, garlic, and Dijon mustard in a separate bowl. Season with salt and pepper to taste.
