How to Shred Brussels Sprouts

There are several ways to shred Brussels sprouts. It all really depends on what tools you already have in your kitchen. My preferred method is with a mandoline slicer, but you can also use a knife or a food-processor with a slicing attachment.

Before shredding Brussels sprouts, make sure to remove any tough layers and lightly trim the woody end part, especially if it is browned.

  • Mandoline slicer is a great versatile tool to have in your kitchen that makes slicing any vegetable a breeze, including brussels sprouts. Just watch your fingers! The blade is super sharp.
  • To shred Brussels sprouts with a mandoline slicer, simply rub a whole sprout back and forth over the mandoline blade until you reach the root.  Once you’ve shaved it down to the root, throw away the woody end part.
  • Few things to keep in mind: you can purchase Brussels sprouts that are cleaned, trimmed, and ready to use already. All you have to do it shred them. If you’re in the market for mandoline slicer, this one from OXO is a great option.

How to Make Brussels Sprouts Caesar Salad

Add shredded Brussels sprouts and romaine lettuce into a large bowl. Add some of the Caesar dressing and toss until well-coated. Taste for salt and pepper, and add more as needed. Add fresh lemon juice to taste.

Transfer the salad to a serving bowl. Top with croutons and Parmesan cheese. Serve the salad with the remaining dressing on the side.

  • Save on prep! Save on prep time and simply pick up a bag of pre-shredded Brussels sprouts from a supermarket, if available.
  • Make ahead. The croutons can be made in advance and stored at room temperature in an airtight container. The dressing can be made 3 days in advance and refrigerated. Let the dressing come back to room temperature before using and whisk to combine. Thin out with little milk if the dressing is too thick.
  • Dressing swap. Keep in mind if you choose to substitute the Caesar dressing with your own version or something store-bought, you may not necessarily need additional lemon juice.

  1. Thinly slice the Brussels sprouts using a mandoline slicer. You can also do this with a food-processor with a slicing attachment. Place the shredded Brussels sprouts into a large bowl along with chopped romaine lettuce.
  2. Add some of the Caesar dressing and toss until well-coated. You want the salad to be nicely coated with the dressing but not to a point that it’s soggy. Taste for salt and pepper. Add fresh lemon juice to taste. Keep in mind if using Caesar dressing other than what’s listed in this recipe, you may not necessarily need the lemon juice. 
  3. Top with croutons and Parmesan cheese, to taste. Serve the salad immediately with the remaining dressing on the side. 

Notes

  • Few Shortcuts: You can save on prep time by using pre-shredded Brussels sprouts from the supermarket. You’ll need about 8-10 oz. of shredded Brussels sprouts. Same with the romaine lettuce. Pick up a bag of already chopped lettuce. You’ll need 10 oz. of lettuce. 
  • Croutons: You’ll have leftover croutons from this recipe. Keep them stored in an airtight container or ziploc bag for up 2 weeks to use in other salads, such as Kale Caesar Salad.
