It’s a family favorite that we make on almost a weekly basis. The flavors are bold, flavorful, and surprisingly easy to pull off, even if you’re new to grilling. 

The marinade soaks into every bite, giving the chicken that juicy, savory, slightly spicy kick we all love, and then comes the homemade Bang Bang sauce. It’s creamy, tangy, and truly makes these chicken skewers next level.

This recipe is perfect for a quick weeknight dinner or a party spread. My family devours them every single time, and if I’m lucky enough to have leftovers, they don’t last long in the fridge.

What is Bang Bang Chicken?

Also known as bam bam chicken or bon bon chicken, bang bang chicken is a Chinese-American dish known for its bold, spicy flavor, which comes largely from its signature sauce. You can find many variations, but the sauce is typically made with a combination of mayonnaise, sweet chili sauce, Sriracha, and lime or vinegar.

Most versions feature deep-fried chicken, which is crispy and golden on the outside and juicy in the center. However, for this version, I grill the chicken, adding a slightly smoky flavor while making the dish just a little healthier.

  • Chicken: We like to use boneless skinless chicken thighs. I use 3 pounds and cut them into 1.5-inch chunks after trimming off any excess fat.
  • Soy Sauce: Use low-sodium soy sauce to give the chicken and savory, umami flavor without adding lots of salt. 
  • Honey and Sriracha: Add a sweet, spicy flavor. 
  • Lime Juice: Tenderizes the chicken and balances the rest of the ingredients. 
  • Bang Bang Sauce: Mayonnaise, Thai sweet chili sauce, Sriracha, honey, lime juice, and minced garlic. 

How to Make Bang Bang Chicken Skewers

Step 1: In a zip-top bag, mix marinade ingredients.

Step 2: Add chicken and marinate the chicken for up to 2 hours.

Step 3: Whisk the bang bang sauce in a small bowl, and chill in the fridge.

Step 4: Thread the marinated chicken pieces onto soaked bamboo skewers or metal skewers.

Step 5: Grill on all sides until nicely charred and cooked through.

Step 6: Brush the skewers with the chilled bang bang sauce, or serve it on the side. Sprinkle with cilantro, and enjoy! 

Bang Bang Chicken Skewers Recipe Tips

  • Don’t skip marinating: Allow for at least 30 minutes for the marinade to soak into the chicken, adding flavor and helping it tenderize. Just don’t let the chicken marinate longer than 2 hours, or it’s likely to become mushy! 
  • Don’t overcrowd the skewer: The chicken pieces can lightly touch on the skewers, but you don’t want them packed too tightly. Otherwise, the air won’t circulate, and the chicken kabobs won’t cook evenly. 
  • Check the internal temperature: Use a good meat thermometer to ensure the chicken reaches an internal temperature of 165°F, and remove it from the grill immediately. 
  • Rest: Set the cooked chicken skewers aside for 5-10 minutes before serving. This allows the natural juices to redistribute, keeping the chicken moist and juicy.

Recipe Variations

  • Make it spicier: Add extra sriracha or crushed red pepper to the sauce.
  • Use chicken breast: Just be careful not to overcook as chicken breasts can dry out quickly.

  • Add vegetables: For a more filling option, thread the skewers with marinated chicken and vegetables like onions, mushrooms, zucchini, and bell peppers.

For the Chicken:

  • 3 lbs. boneless, skinless chicken thighs, cut into 1.5-inch chunks (excess fat trimmed)
  • ¼ cup soy sauce (low sodium)
  • 1 Tbsp. honey
  • 2 Tbsp. sriracha
  • 2 Tbsp. lime juice
  • 2 Tbsp. avocado oil
  • 1 tsp. kosher salt
  • Black pepper, to taste
  • Chopped fresh cilantro, for garnish
  • Bamboo or metal skewers (if bamboo, soak in water for 30 minutes)

For the Bang Bang Sauce:

  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 Tbsp. sriracha
  • 1 Tbsp. honey
  • 1 Tbsp. lime juice
  • 1 clove garlic, minced

Instructions

  1. In a large bowl or zip-top bag, mix soy sauce, honey, sriracha, lime juice, oil, salt, and pepper. Add chicken pieces and toss to coat. Marinate in the fridge for at least 30 minutes or up to 2 hours.
  2. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic. Taste and adjust heat/sweetness as you like. Refrigerate until ready to use.
  3. Thread marinated chicken onto soaked bamboo or metal skewers.
  4. Preheat a grill over medium-high heat. Lightly oil the grates. Grill skewers for 13-15 minutes (start checking around 10 minutes), turning occasionally or until nicely charred and cooked through.
  5. Brush the skewers with bang bang sauce right before serving. Alternatively, serve it on the side for dipping. Sprinkle with chopped cilantro.
