Description
Grilled instead of fried, this recipe for bang bang chicken skewers is sweet, spicy, and perfect for cookouts, weeknight dinners, or meal prep!

For the Chicken:
- 3 lbs. boneless, skinless chicken thighs, cut into 1.5-inch chunks (excess fat trimmed)
- 1/4 cup soy sauce (low sodium)
- 1 Tbsp. honey
- 2 Tbsp. sriracha
- 2 Tbsp. lime juice
- 2 Tbsp. avocado oil
- 1 tsp. kosher salt
- Black pepper, to taste
- Chopped fresh cilantro, for garnish
- Bamboo or metal skewers (if bamboo, soak in water for 30 minutes)
For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup Thai sweet chili sauce
- 1 Tbsp. sriracha
- 1 Tbsp. honey
- 1 Tbsp. lime juice
- 1 clove garlic, minced
Instructions
- In a large bowl or zip-top bag, mix soy sauce, honey, sriracha, lime juice, oil, salt, and pepper. Add chicken pieces and toss to coat. Marinate in the fridge for at least 30 minutes or up to 2 hours.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic. Taste and adjust heat/sweetness as you like. Refrigerate until ready to use.
- Thread marinated chicken onto soaked bamboo or metal skewers.
- Preheat a grill over medium-high heat. Lightly oil the grates. Grill skewers for 13-15 minutes (start checking around 10 minutes), turning occasionally or until nicely charred and cooked through.
- Brush the skewers with bang bang sauce right before serving. Alternatively, serve it on the side for dipping. Sprinkle with chopped cilantro.
