Whip up this easy homemade Greek salad dressing in just minutes for authentic Greek flavor with most ingredients found in your pantry.

Then make a big bowl of Chopped Greek Salad with Avocado to enjoy with this zesty dressing!

This Greek vinaigrette is one of the very first recipes I published on my site over 10 years ago, and it’s still the one I make most often. I’ve always loved Greek salads and almost always order them at restaurants, so having a homemade version that was easy, versatile, and full of flavor just made sense. It quickly became a staple in my kitchen and never really left.

I usually make a double batch and keep it in the fridge for up to one week, which makes throwing meals together so much easier. I use it on salads, spoon it over roasted vegetables, drizzle it on grain bowls, and even use it as a quick marinade.

What is Greek Vinaigrette?

Greek vinaigrette is a bright, tangy dressing made with Mediterranean staples like extra-virgin olive oil, red wine vinegar, fresh lemon juice, garlic, and dried oregano.

My version focuses on that classic balance. The vinegar and lemon bring the tang, the olive oil smooths it out, and oregano gives it that unmistakable Greek flavor.

Why You’ll Love This Greek Vinaigrette Recipe

I use this Greek salad dressing recipe 99.9% of times on any dish that I want to add Greek flavor, such as this Greek salad skewers. It has the perfect balance of lemon, garlic, and oregano. It stores really well in the refrigerator for up to one week.

The best part is you can use it over and over on green salads, quinoa salads, or pasta salads. Try it over our orzo pasta salad.. Pretty much any type of salad that requires some type of Greek dressing recipe or Greek vinaigrette.

Greek Vinaigrette Recipe FAQs

Greek vs Italian Dressing

There are many variations of the two dressings. However, Greek dressing typically features olive oil, red wine vinegar, lemon juice, and Mediterranean herbs like dried oregano.

Meanwhile, Italian dressing commonly contains a mixture of olive oil, vinegar, and flavor enhancers common in Italian cuisine such as salt, pepper, and garlic.

Is Greek vinaigrette good for you?

Greek dressing is low in saturated fat and is a good source of healthy omega-3 fats thanks to the olive oil and offers anti-inflammatory properties thanks to the garlic and herbs. As a result, it is often considered a healthy salad dressing option.

What gives greek dressing a tangy flavor?

Greek dressing gets its tangy flavor from the combination of red wine vinegar and fresh lemon juice. The vinegar brings sharp acidity, while the lemon adds a brighter, fresher tang that keeps the dressing balanced.

Ingredients

Units Scale

Yields: ½ cup

  • ¼ cup extra-virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1 lemon, juiced
  • 2 cloves garlic, smashed with side of your knife then peeled*
  • 1 tsp. dried oregano
  • 3 pinches of salt
  • 1015 grinds black pepper

Instructions

  1. Add all ingredients to a mason jar or any type of container with a lid. (I love this all-in-one dressing shaker). Cover and shake vigorously until combined. Adjust salt and pepper as needed.
  2. Cover and store in the refrigerator up to 1 week. Stir before serving.

Notes

*the garlic flavor gets stronger the longer the dressing sits, so if serving the dressing immediately, you can add minced or pressed garlic, otherwise, smashed garlic works great here as it gradually flavors the dressing
