Summer Kid Snacks

Finding healthy snacks or meals that kids and toddlers will eat can be a task at times. A little trick I’ve found is to make the snacks appear more interesting and yummy. 

I’m sharing my go-to favorite kid friendly snacks: Veggie roll-ups, granola balls, and watermelon pizza. All of these snacks are great to pair with other more filling foods, such as our 20-minute whole wheat mac and cheese recipe.

These easy kids snacks are healthy, fun, and 100% kid-approved! Plus, they come together quickly and can be a hands-on recipe for kids to help make, too.

Veggie Rolls Ups

Add this veggie roll up snack recipe to your summer meal plan for a healthy snack loaded with fresh veggies. Choose the veggie your kids love with a little seasoning, and cream cheese, all wrapped in a tortilla. 

They’re sliced up into pinwheels which your kids will love. These snack-size veggie roll-ups are a versatile, fun, and easy way to get your kids to eat their vegetables!

Ingredients

  • Vegetables – Choose your favorite vegetables or follow this recipe:
    • spinach
    • carrots
    • tomato
    • cucumber
  • Cheese – shredded Mexican cheese adds a little extra seasoning and a blend of cheeses. You could also use shredded mozzarella, cheddar, or Colby Jack. For the adults, I definitely recommend trying crumbled feta!
  • Cream cheese – Use whipped cream cheese for easy spreading.
  • Seasoning – A little onion powder is a great way to add flavor to plain cream cheese. Garlic powder or Italian seasoning can be used instead.
  • Tortillas – I like using whole wheat tortillas for a healthier option without losing out on flavor. Feel free to use any other tortillas of choice.

Build your Roll ups

  • Spread the cream cheese evenly over one side of the tortilla. Sprinkle with onion powder, salt, and pepper.
  • Layer the vegetables on top of the cream cheese spread followed by the shredded cheese.
  • Roll the tortilla up tightly and then slice it into pinwheels or serving-size pieces.

Tip: If you have a picky eater, chop up the veggies fairly small before rolling them up in a tortilla.

Granola Balls

Sweet, salty, and the best combination of crunchy and chewy. These granola balls are easy to make and are so tasty you’ll be craving more!

You can add your favorite dried fruit or even some chocolate chips. This is a super fun hands-on kid-friendly recipe too!

Ingredients

  • Granola – Choose your favorite granola or try one of these tasty granola recipes:
  • Pretzels – Pretzel twists or pretzel sticks work here.
  • Almond butter – You can switch it up with different types of nut butters, such as peanut, cashew, sunflower, or hazelnut.
  • Dried cranberries – Also try raisins, cherries, blueberries, or pitted dates.

How to Make Granola Balls

  • Add the granola and pretzels and pulse until a crumbly consistency.
  • Add almond butter, cranberries, and any other ingredient. Pulse until just combined. Refrigerate for 20 minutes.
  • Roll granola mix into 1-inch balls and enjoy!

Watermelon Pizza

One of the most appealing and fun snacks to make is this watermelon pizza. Sometimes just saying pizza gets the kids excited, so on a hot summer day, a slice of this cool, crisp, fruity pizza is just what they’ll be craving!

Topped with a creamy yogurt cream cheese spread, coconut, fruit slices, and crunch granola, this watermelon pizza has a ton of texture and is such a refreshing snack. 

Ingredients

  • Cream cheese – Softened at room temperature.
  • Vanilla Greek yogurt – This yogurt is thick and vanilla adds more flavor. Combined with the cream cheese, this spread is smooth and creamy.
  • Watermelon – For the pizza effect, slice the watermelon into 1-inch rounds, a great crust for the toppings of this watermelon pizza.
  • Granola – Use your favorite granola or choose one of the recipes listed above.
  • Coconut – A little sweetened shredded coconut adds texture and a nutty flavor. Quickly toast the coconut in the oven on broil for 1-2 minutes for crispy crunchy coconut shreds.  
  • Honey – The best sweetener to keep this kid-friendly snack free of refined sugar.

How to Make Watermelon Pizza

  • Slice the center of the watermelon into rounds.
  • Combine cream cheese and yogurt together. Spread evenly over watermelon pizza crust.
  • Top with granola, coconut, fruit, and a drizzle of honey.
  • Cut pizza into wedges and serve immediately.

Veggie Roll-Ups

  • Whole wheat tortillas or any other tortilla of choice
  • Whipped cream cheese
  • Onion powder
  • Fresh baby spinach, chopped
  • Carrots, shredded
  • Tomato, chopped
  • Cucumber, thinly sliced
  • Shredded Mexican blend cheese
  • Kosher salt and black pepper to taste

Granola Balls

  • 3/4 cup granola
  • 1/2 cup mini pretzels
  • 1/2 cup creamy almond butter
  • 1/4 cup dried cranberries

Watermelon Pizza

  • 2 oz. cream cheese, softened
  • 1/4 cup vanilla Greek yogurt
  • 1 round slice of watermelon, about 1-inch thick
  • Fresh fruit of choice, sliced and/or chopped
  • Granola
  • Shredded coconut
  • Honey

Instructions

Veggie Roll-Ups

  1. Spread cream cheese evenly over the entire tortilla. Sprinkle lightly with onion powder and then layer on the veggies and cheese (in any order you like). There are no measurements! Simply eyeball it and add a little more or less of what you like. Season with salt and pepper, to taste.
  2. Starting at one end, tightly roll up the tortilla and slice it into serving pieces.

Granola Balls

  1. In a food processor, pulse granola and pretzels into a medium crumb-like consistency. Add almond butter and cranberries; pulse a couple of times until combined. Refrigerate the mixture for 20 minutes and then roll into approximately 1-inch balls. Store refrigerated in a closed container. Makes about 12-14 balls.

Watermelon Pizza

  1. Combine together the cream cheese and Greek yogurt. Spread the mixture evenly over a slice of watermelon. Top the watermelon with fruit, granola, coconut, and light drizzle of honey. Cut into wedges and serve immediately.

Notes

  • All three recipes are super versatile: use your kids’ favorite veggies for the roll-ups, favorite dried fruit for the granola balls, and favorite fruit/toppings for the watermelon pizza. Each recipe takes approximately 15 minutes to make.
  • For the granola balls, I used all-natural, no stir, almond butter and found that different brands yielded different results. So depending on the type and brand, you may require anywhere from 1/2 cup – 3/4 cup almond butter.
