This easy sheet pan Italian sausage, and peppers recipe is by far one of my favorite dinner recipes! Cooked on a single sheet pan for minimal prep time and easy cleanup. It’s a hearty meal even your picky eaters will look forward to eating with savory flavors and plenty of cheese.

You can mix and match different vegetables and ingredients to make it your own. The secrets to success are to create the perfect blend of spices and to avoid overcooking.

Don’t worry, though. With my tips and tricks, this dish is virtually failproof, turning out unbelievably tasty every time.

  • Olive oil: Use olive oil to create a seasoning rub and cook the chicken and vegetables.
  • Garlic: Adds more flavor to the dish.
  • Spices: Oregano, parsley, thyme, and red pepper flakes. 
  • Bell peppers: Include any color of bell peppers you like that are thinly sliced.
  • Red onion: Adds a vibrant burst of color and a mild, slightly sweet flavor. 
  • Baby gold potatoes: These bring a delightful combination of buttery texture and earthy sweetness

  • Parmesan cheese: Use freshly grated parmesan cheese for best results.

One of the best things about this sheet pan sausage dish is that it’s extremely easy to customize. Mix and match different ingredients to suit your flavor preferences and dietary needs: 

  • Italian sausage: Swap it out for chicken sausage to change up the flavors. Or, use plain chicken instead. Just make sure to adjust the cooking time accordingly.
  • Fresh herbs: Not a fan of parsley? Try other fresh herbs like basil, cilantro, or dill.
  • Veggies: Add to or replace the vegetables with options like carrots, zucchini, or asparagus. 
  • Vegetarian-friendly: Make this a vegetarian dish by omitting the sausage and adding tempeh, tofu, or beans instead. 

How To Make Sausage and Peppers with Potatoes

You’ll need an extra-large baking sheet, a small mixing bowl, and a large bowl before you begin.  Check out the recipe card below for detailed instructions.

Step 1: Whisk the olive oil, garlic, and seasonings in a small bowl. Add to the vegetables.

Step 2: Toss the bell peppers, onions, and potatoes in a bowl with the oil herb mixture. Then, season with salt and pepper to taste.

Step 3: Spread the veggie mixture and sausage in a single layer on the prepared baking sheet. Bake for 40 minutes at 400 degrees F.

Step 4: Sprinkle your sheet pan Italian sausage with parsley and Parmesan before serving, and enjoy! 

Expert Tips

  • Line your baking sheet with parchment paper instead of foil. Foil is made out of thin aluminum and has no non-stick properties, unlike parchment paper. It’ll make cleanup a breeze!
  • Do not overcrowd your sheet pan. You want to give room for steam to escape, otherwise, you will end up with soggy veggies.
  • Cut everything into approximately the same size. That way everything cooks evenly and within the same time range.
  • Season thoroughly with salt, pepper, and spices. I love to use my hands to toss the veggies with spices to ensure everything is coated evenly.
  • Right before serving, garnish with fresh herbs for an added punch of color and flavor.
  • Best way to use up leftovers? Build a salad bowl by piling on veggies and protein on top of greens, such as spinach or kale. Add whatever else you have on hand (fresh veggies, nuts, seeds, cheese) and finish off with a drizzle of a salad dressing, such as Greek Salad Dressing.

How to Store and Reheat

Store leftover sheet pan sausage, peppers, and onions in an airtight container in the refrigerator. They will stay fresh for up to 4 days

When you’re ready to eat, reheat individual portions in the microwave. Or, warm the dish in the oven at 425 degrees for about 10 minutes or until heated through. 

Serving Suggestions

You can easily serve this recipe on its own as a complete meal. However, if you want to bulk it up, some of our favorite ways to serve it are with: 

  • Whole Grains: Plate your sausage and veggies over cooked brown rice, farro, or quinoa for a hearty and nutritious meal. For a low-carb alternative, try cauliflower rice instead! 
  • Pasta: Toss the sausage and peppers with your favorite cooked pasta for a filling comfort food dinner. 
  • Bread: Load the sausage and peppers into your favorite toasted bun, and add a slice of provolone cheese to enjoy this recipe as a sandwich.

In most cases, fresh sausage crafted from pure meat and spices is gluten-free. However, processed or pre-packaged sausages might incorporate gluten as fillers or flavorings.

It’s essential to check the ingredient list and labels for any gluten-containing additives. Peppers themselves are naturally gluten-free. 

Can I make sausage and peppers in a slow cooker? 

Yes, you can make sausage and peppers in a slow cooker. However, the ingredients will be softer and will not develop the browned, crisp exterior we achieve with a sheet pan. 

Start by browning the sausages for a few minutes in a pan on the stove with some oil. Then, transfer them to the slow cooker, and add in the garlic, onion, peppers, and potatoes. Next, stir in all the seasonings, and cover the ingredients with marinara sauce or broth. Cover, and cook for 5-6 hours on low or 2-3 hours on high. Sprinkle with parmesan cheese and fresh herbs when ready to serve.

One pan meals just might be the best invention ever. This Italian sausage and peppers recipe is made entirely on a sheet pan.


Ingredients

  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 2 tsp. dried oregano
  • 1 tsp. dried parsley
  • 1/4 tsp. dried thyme
  • 1/4 tsp red pepper flakes
  • 2 medium bell peppers (any color), cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch chunks
  • 12 oz. baby gold potatoes, halved
  • 1 lb. Italian sweet sausage, cut into 1 1/2-inch chunks
  • Fresh chopped parsley
  • Freshly grated Parmesan cheese
  • Kosher salt and fresh black pepper

Instructions

  1. Preheat the oven to 400 degrees F. Line an extra-large baking sheet (19.5 X 13.5) with parchment paper. Set aside.
  2. In a small bowl, whisk together the olive oil, garlic, oregano, parsley, thyme, and red pepper flakes.
  3. In a large mixing bowl, toss the bell peppers, onions, and potatoes with the oil herb mixture. Season with salt and pepper, to taste. I like to use my hands for this part to ensure the vegetables are fully coated with the seasoning. Spread onto the prepared baking sheet in a single layer. Add the sausage.
  4. Bake for 40 minutes, tossing halfway, or until the sausage and veggies are tender. Sprinkle with parsley and Parmesan before serving.
