Description

Refreshing salad with watermelon, cucumber, arugula, feta, and balsamic glaze. It’s a delicious combination of ingredients that will leave you craving more! 


Ingredients

  • 4 cups chilled sweet seedless watermelon, cut into cubes
  • 1 cup chopped English cucumber or thinly sliced Persian cucumbers (peeled or unpeeled)
  • 1 cup baby arugula, lightly packed
  • 1/4 cup crumbled feta cheese
  • 1-2 Tbsp. balsamic glaze, or to taste, homemade or store-bought
  • Kosher salt

Instructions

  1. Add the cold watermelon, cucumber, and arugula to a large serving bowl and gently toss to combine.
  2. Drizzle lightly with balsamic glaze and top with feta cheese. Season lightly with kosher salt, if needed, and serve immediately.

Notes

  • Recipe Tip: This salad tastes best with cold, sweet watermelon. If your watermelon isn’t very sweet, wait to make the salad or add a little drizzle of honey to balance the flavor.
