Description

Delicious and light grilled turkey taco lettuce wraps. Customize with your favorite toppings for an easy, low-carb weeknight meal!


Ingredients

Turkey

  • 1 1/41 1/2 pounds Shady Brook Farms turkey breast chops, rinsed and pat dry
  • 2 Tbsp. extra-virgin olive oil
  • 1 tsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1 tsp. kosher salt
  • 2 garlic cloves, pressed
  • zest and juice 1 lime
  • black pepper, to taste

Quick Cilantro Lime Crema

  • 1/2 cup sour cream
  • 1 Tbsp. fresh lime juice
  • 3 Tbsp. cilantro, minced
  • 1 garlic clove, pressed
  • salt and pepper, to taste

To Serve

  • iceberg lettuce, leaves separated (see how)
  • tomatoes, chopped
  • avocado, chopped
  • red onion, finely chopped
  • cilantro, roughly chopped
  • queso fresco cheese*, crumbled
  • quick cilantro lime crema

Instructions

Turkey

  1. Add olive oil through black pepper into a small bowl and stir to combine.
  2. Place the turkey chops into a rimmed dish and pour the marinade over the chops, spreading to cover both sides. Let sit at room temperature for 30 minutes.
  3. Grill for 3-4 minutes per side or until a meat thermometer reads 165 degrees F throughout each turkey chop. Do not overcook or they will be too dry.
  4. Transfer to a cutting board and let sit for 5 minutes before thinly slicing. Serve inside a lettuce with desired toppings of choice.

Quick Cilantro Lime Crema

  1. In a bowl combine all ingredients until well blended.

Notes

*Queso fresco cheese can be found at the cheese counter in most grocery stores. It’s a soft, mild cheese….reminds of a lot of ricotta and feta but not as salty.
