Eat more greens with this 5-minute kale and arugula blend salad with shaved parmesan and toasted pine nuts, tossed in a simple olive oil lemon dressing. So easy, so good, and goes with any dish imaginable!


Ingredients

  • 5 oz. baby kale and arugula blend
  • 1 cup shaved Parmesan cheese
  • 3/4 cup toasted pine nuts
  • 1 avocado, pitted + sliced
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • Kosher salt and fresh black pepper

Instructions

  1. Add baby greens to a bowl or platter. Top with Parmesan cheese, pine nuts, and avocado.
  2. In a small bowl, whisk the olive oil with lemon juice, salt, and pepper. Pour over the salad and toss to combine. Serve immediately.
