Description

This easy crustless quiche is loaded with crispy bacon, sweet sautéed onions, and melty Swiss cheese baked into a rich, creamy egg filling. It’s low-carb, packed with flavor, and perfect for breakfast, brunch, or a light dinner—no crust needed!


Ingredients

  • 6 bacon strips, chopped (not thick cut)
  • 1/2 cup finely chopped onion
  • 6 large eggs
  • 1 cup heavy whipping cream
  • 1 tsp. garlic powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 2 cups grated Swiss cheese (freshly grated will melt better)

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch deep pie dish or similar-sized baking dish about 1-quart. 
  2. In a skillet over medium heat, cook the chopped bacon until crispy, about 8-10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving about a tablespoon of bacon grease in the skillet.
  3. Add the chopped onion to the skillet and cook until softened, about 2-3 minutes. Remove from heat to the bacon with a slotted spoon.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and black pepper until smooth and well combined.
  5. Stir in the grated Swiss cheese, cooked bacon, and sautéed onions.
  6. Pour the mixture into the prepared baking dish, gently swirling or stirring to evenly distribute the ingredients.
  7. Bake the quiche in the center rack for 35–40 minutes, or until the edges are lightly golden and the center is just set. Start checking around 30 minutes. If it’s browning too quickly, especially around the edges, loosely cover with foil. To test doneness, insert a thin knife into the center, it should come out clean with no visible liquid. Let the quiche cool for a few minutes before slicing into wedges. Enjoy warm or at room temperature.

Notes

  • Baking Dish: Metal or thin glass dishes can overcook the edges. It’s best to use a ceramic or thick glass pie dish for more even baking.
  • Bake Time: The bake time is based on using a 9-inch deep-dish pie plate. If you use a different size or type of dish, the bake time may vary slightly.
