Description
Coconut lime rice is a delicious and bright side dish that goes great with your weeknight dinner. This quick and easy 20-minute dish is made from scratch and is the perfect pairing for Mexican or grilled meals.

- 1 cup jasmine rice
- 3/4 cup coconut milk
- 1 1/4 cup water
- 1 lime, zested
- 1 tsp. fresh lime juice
- 1 Tbsp. minced fresh cilantro
- Kosher salt
Instructions
- Combine the rice, coconut milk, water, and pinch of salt in a 2-quart saucepan. Bring to a simmer. Stir a few times at beginning to separate the rice, then cook undisturbed, partially covered at a gentle simmer until liquid is absorbed, about 12-15 minutes. At 12 minutes check the rice for doneness.
- Remove the pan from the heat and let the rice rest, covered, for 5 minutes. Then, fluff the rice with a fork and stir in the lime zest, lime juice, and cilantro. Season with more as needed. Taste the rice and add more fresh lime juice if needed.
Notes
- Rice: If you like, you can rinse the rice before cooking but it’s not necessary.
- Coconut Milk: It’s normal for the cream and liquid to separate in canned coconut milk. Shake the can before opening or blend the contents of the can until smooth.
