Description

Apple walnut chicken salad is the perfect dish for a quick lunch at work or to take to school. This fabulous salad is made with creamy dressing, crunchy walnuts, and tart apples. 


Ingredients

Dressing

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tsp. apple cider vinegar
  • 1 tsp. Dijon mustard
  • Kosher salt and fresh black pepper

Salad

  • 2 cups diced cooked chicken
  • 1 medium Granny Smith apple, diced (about 1 cup)
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/2 cup seedless red grapes, halved
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped parsley

Instructions

  1. In a medium bowl, whisk together the dressing ingredients.
  2. Fold in chicken, apples, celery, onion, grapes, walnuts, and parsley. 
  3. Cover and refrigerate for at least 30 minutes up to overnight. Before serving taste for salt, pepper, and acidity. 
  4. Serve on toast, crackers, or lettuce leaves.

Notes

  • Leftovers: Store leftovers in an airtight container for up 3-5 days. 
  • Texture: Salad can be diced small or large. I personally prefer smaller dice so I can enjoy a forkful of everything in every bite.
