Description
Apple walnut chicken salad is the perfect dish for a quick lunch at work or to take to school. This fabulous salad is made with creamy dressing, crunchy walnuts, and tart apples.

Dressing
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tsp. apple cider vinegar
- 1 tsp. Dijon mustard
- Kosher salt and fresh black pepper
Salad
- 2 cups diced cooked chicken
- 1 medium Granny Smith apple, diced (about 1 cup)
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/2 cup seedless red grapes, halved
- 1/2 cup chopped walnuts
- 1/4 cup chopped parsley
Instructions
- In a medium bowl, whisk together the dressing ingredients.
- Fold in chicken, apples, celery, onion, grapes, walnuts, and parsley.
- Cover and refrigerate for at least 30 minutes up to overnight. Before serving taste for salt, pepper, and acidity.
- Serve on toast, crackers, or lettuce leaves.
Notes
- Leftovers: Store leftovers in an airtight container for up 3-5 days.
- Texture: Salad can be diced small or large. I personally prefer smaller dice so I can enjoy a forkful of everything in every bite.
