Tomatoes, olives, cucumbers, and feta on a skewer drizzled with a tasty Greek vinaigrette. These salad skewers are incredibly easy to make and so fun to eat!

They are perfect as an appetizer or side dish for any occasion – big or small.

They require only 4 ingredients plus the vinaigrette. It’s the same Greek vinaigrette that I pretty much use on all of my Greek salads, sides, and meats. It’s super tasty and can be made ahead of time.

Ingredients for Greek Salad Skewers

For these salad skewers, you only need four ingredients, plus the Greek vinaigrette:

  • Tomatoes: Grape tomatoes or cherry tomatoes both work. Look for tomatoes that are not too small and not too ripe so when you skewer them on they do not crush. 
  • Feta Cheese: I recommend using feta in brine for these skewers, usually sold as a block. It’s going to be moist and not dry out as fast. You can cut the feta into cubes yourself. 
  • Olives: Kalamata olives have a rich, fruity flavor and work great in this recipe. But you can also use black olives. They’re going to be milder in taste.
  • Cucumbers: Baby cucumbers, also known as Persian cucumbers. They’re thin skinned and narrow, and make the perfect rounds for these skewers. English cucumber can be used instead. Just make sure to cut each slice in half, otherwise, it’s going to be too big.
  • Greek Vinaigrette: The recipe for the vinaigrette is included in the recipe card below. It’s a really simple vinaigrette consisting of olive oil, red wine vinegar, lemon juice, garlic, and dried oregano. You can prepare it days in advance and keep it stored until ready to serve.

You will also need 6-inch bamboo skewers or cocktail party picks.

How to Make Greek Salad Skewers

  • Make the Vinaigrette: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, and oregano. Season with salt and pepper, to taste. Set aside at room temperature while you prepare the skewers.

  • Prep the Veggies + Cheese: Slice the cucumbers into 1/2-inch thick rounds and set aside.

Remove the feta from the brine (do not rinse it off) and place it on a cutting board. Using a sharp knife, cut the block into 3/4 – 1 inch cubes.

Wash and drain your tomatoes over a colander. Remove the olives from the brine and set over a colander to drain.

  • Assemble: Thread one tomato, one feta cube, one cucumber slice, and one feta cube onto the skewer and place on a platter. Repeat until you have a total of 12 skewers. Drizzle with vinaigrette right before serving. If desired, garnish with fresh minced parsley.

These can be stored in the refrigerator for a short time (1-2 hours) before serving, or served immediately.

  • 12 grape or cherry tomatoes
  • 68 oz. whole block of feta in brine, cut into 12 (3/41 inch) cubes
  • 12 whole Kalamata olives, pitted
  • 34 mini cucumbers (Persian), cut into 1/2-inch thick rounds
  • Fresh minced parsley, for garnish, optional
  • 12 (6-inch) bamboo skewers

Vinaigrette

  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 1 garlic clove, minced
  • 1/4 tsp. dried oregano
  • Kosher salt and fresh ground black pepper

Instructions

  1. In a small bowl, whisk together the vinaigrette ingredients. Season with salt and pepper to taste. Set aside at room temperature while you prepare the skewers.
  2. To assemble the skewers, thread one tomato, feta cube, olive, and cucumber slice onto the skewer. Transfer to a serving platter. (When threading on the feta, hold it tightly between your fingers to avoid it cracking and/or breaking. I usually like to have a few extra cubes of feta in case some do break). Repeat until you have a total of 12 skewers.
  3. Right before serving, drizzle the skewers with the vinaigrette. If desired, garnish with parsley and season with additional salt and pepper.

Notes

  • Make Ahead: These skewers can be stored in the refrigerator for a short time (1-2 hours) before serving. Do not drizzle with vinaigrette if storing in the refrigerator. Instead, drizzle with vinaigrette right before serving. The vinaigrette can be made a few days in advance and kept refrigerated until ready to serve.
