These melted snowman cookies are by far the most fun cookies to make! The cookie recipe is a straightforward chocolate and peanut butter drop cookie recipe. There are no special tools or rolling pins involved.  Making them a fun and easy cookie recipe to try with the kids!

The cookie is soft with delicious chocolate and peanut butter flavor. Topped with melted white chocolate and decorated with peanut butter cups, mini chocolate chips, and sprinkles.

How to Make Melted Snowman Cookies

These melting snowmen cookies do not require any special ingredients or tools. The cookies can be baked up to 3-4 days in advance and decorated later.

Ingredients You Will Need

You will need the following ingredients to make melted snowman cookies:

  • butter
  • creamy peanut butter
  • cane sugar
  • brown sugar
  • baking powder
  • baking soda
  • salt
  • egg
  • milk
  • vanilla
  • cocoa powder
  • all-purpose flour
  • white chocolate
  • coconut oil
  • mini peanut butter cups
  • mini chocolate chips
  • sprinkles “jimmies”

In a large bowl, beat the butter and peanut butter with an electric mixer on high speed. Add both types of sugar, baking powder, baking soda, and salt. Beat until combined.

Beat in egg, milk, and vanilla. Then on low speed, beat in cocoa powder and flour.

Shape the Cookies and Bake

Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

With a rubber spatula, scrape down the bowl, forming the dough into one ball. Then divide it into two equal balls.

With hands, roll out the first ball into a 13-inch log. Cut into 10 even slices. Shape each slice into a ball and place 2-inches apart on a baking sheet. Repeat with the second dough ball.

Do I need to roll the cookies into a log first?  Rolling the dough into a log and slicing ensures the cookies are the same size. If you’d prefer, you can also use a two-tablespoon scoop or melon-baller scoop instead. The best part about drop cookies is that they don’t take much time to make and get on your cookie tray quickly.

Bake for 8 minutes. Remove the cookies from the oven and lightly flatten the tops of the cookies with a non-stick spatula. Place back in the oven and bake for an additional 2-3 minutes. Cool completely before decorating.

Decorate the Cookies

Melt the white chocolate in the microwave, stirring every 30 seconds until melted. Stir in coconut oil.

Make the Santa hats with miniature peanut butter cups by slicing the cup in half vertically and then slicing the tops off.

Spoon a little melted chocolate over the cooled cookie, add the peanut butter cup hats, mini chocolate chips for the eyes, and sprinkles for the nose. (Note: orange, red, or brown sprinkles look the best for the nose. I used green sprinkles in step-by-step photos as I ran out of sprinkles!)

Variations

This Christmas cookie recipe is easy to alter to make it exactly how you like. Here are some options to get you started.

  • Use chocolate chips instead of cocoa powder. You can easily melt the chips in a double boiler or in the microwave.  
  • Make Olaf melting snowmen with an orange sprinkle for the carrot nose and royal icing in a piping bag to make the stick arms.  
  • Use a large, halved marshmallow for the head of the melted snowman, and use black gel icing to make snowman faces.  
  • Use mini M&Ms or miniature chocolate chips for the buttons down the front of the cookies.  
  • Add a splash of almond extract to the cookie batter for a more intense flavor.

  • Gently microwave the white chocolate and stir in between heating, and then spread the melted chocolate over the top of the cookies.  
  • Cut the peanut butter cups into hats while the cookies are cooling to save time.
  • You can buy pre-packaged snowman-themed sprinkles from Wilton at some grocery stores or online.
  • Allow the cream cheese, eggs, and butter to come to room temperature before mixing them into the batter.
  • Use your favorite creamy peanut butter for the cookies. If using natural peanut butter make sure to stir the peanut before using it to incorporate the oil on top.

Refrigerate: Store any leftover Christmas cookies in an airtight container on the counter for up to five days.

  • 1/2 cup brown sugar, packed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 3 Tbsp milk
  • 1/2 tsp vanilla extract
  • 1/4 cup cocoa powder, unsweetened
  • 1 1/2 cup all-purpose flour
  • 810 oz good-quality white chocolate
  • 1 tsp coconut oil
  • Miniature peanut butter cups unwrapped, halved vertically, and tops sliced off (see photos)
  • Mini chocolate chips
  • Orange, red, or brown sprinkles “jimmies”

Instructions

  1. Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper. 
  2. In a large bowl, beat butter and peanut butter with a handheld mixer on high speed. Add cane sugar, brown sugar, baking powder, baking soda, and salt. Beat until combined. Add egg, milk, and vanilla; beat until combined. On low speed, beat in cocoa powder and flour.
  3. Scrape down the bowl with a rubber spatula. Divide the dough into two balls. With hands, roll out the first ball into a 13-inch log. Cut into 10 even slices. Shape each slice into a ball and place 2-inches apart on a baking sheet. Repeat with the second dough half.
  4. Bake for 8 minutes. Remove the cookies from the oven and lightly flatten the tops of the cookies with a non-stick spatula. Place back in the oven and bake for an additional 2-3 minutes. Remove from the oven, allow to cool on the baking sheet for 5 minutes, and then transfer to a wire rack. 
  5. In a microwave-safe bowl, microwave the white chocolate until completely melted and smooth, stirring every 30 seconds. Stir in coconut oil.
  6. Spoon some of the melted chocolate over the cooled cookie to resemble melting snow, add peanut butter cups to resemble a hat, mini chocolate chips for the eyes, and sprinkles for the nose. Allow the chocolate to set at room temperature. Store in a covered container for up to 4 days.
