Mini Chicken Meatloaves
Basic weeknight dinner is sometimes the best type of dinner. These mini chicken meatloaves get a ton of flavor from the addition of Italian sausage and their tenderness comes from the grated onion.
I love a simple weeknight dinner that requires simple ingredients and little prep time. These mini chicken meatloaves are exactly that!
Made with ground chicken and Italian sausage, and topped with a simple ketchup glaze. They are tender, juicy, and make one hearty meal when served over red skin mashed potatoes with a side of Brussels sprouts Caesar salad, or easy oven roasted broccoli.
Ingredients
- ground chicken
- Italian mild sausage
- white onion
- Panko breadcrumbs
- egg
- ketchup
- soy sauce
- parsley
- salt and pepper
How to Make Mini Chicken Meatloaves
In a mixing bowl, combine the ground chicken, Italian sausage, onion, Panko, and egg. Season with salt and pepper. Mix the mixture by hand. Let rest for 5 minutes.
Form the mixture into 10 small football-shaped loaves. Place on a parchment-lined baking sheet. Bake in a preheated 425 F oven for 17-22 minutes.
In a separate small bowl, whisk together the ketchup and soy sauce. Brush over cooked meatloaves and broil for 1-2 minutes. Garnish with chopped parsley and serve.

Ingredients
- 1 lb. ground chicken
- 10 oz. Italian mild sausage
- 1 medium onion, grated using a box grater*
- 1/2 cup plain Panko breadcrumbs
- 1 large egg
- 1/2 cup ketchup
- 2 tsp. low-sodium soy sauce
- Fresh finely chopped parsley
- Kosher salt
Instructions
- Preheat the oven to 425 degrees F. Line a large sheet pan with parchment paper and set aside.
- In a large bowl, gently combine by hand the chicken, sausage, onion (including the juices), breadcrumbs, and egg. Season with salt, to taste. Do not overmix. Let the mixture rest for 5 minutes.
- Form the meatloaf mixture into 10 football shaped loaves, about 3 1/3 inches long, and place on the prepared sheet pan. Bake for 17-22 minutes or until fully cooked.
- Meanwhile, in a small bowl whisk together the ketchup and soy sauce. Spread over the meatloaves and broil until the sauce begins to brown, about 2 minutes.
- Sprinkle with chopped parsley and serve.
Notes
- You can also quarter the onion and shred it in a food processor.

It turned out great! I used mild Italian chicken sausage (not pork) and added about 1 Tbsp of the sauce to the meat mixture. I left the glaze off two and decorated them as bunnies for my granddaughters!
