I love the idea of an all veggie sandwich. It’s light, refreshing and healthy. Plus it’s pretty easy to make. We love these for breakfast or lunch.
All you need is a variety of veggies. I used a combination of lettuce, baby spinach, tomatoes, cucumbers, avocado, and fresh cilantro leaves. I love using fresh herbs in my sandwich, especially cilantro. It’s so refreshing! It’s a little trick I picked up from my hubby, who never disappoints with his sandwich making skills.
Then your favorite bagels and a generous amount of Smoked Salmon Spread. Making your own salmon spread is pretty easy and it lasts up to a good week in the fridge. Plus the taste is non comparable to something you would pick up at the store.
Key to building delish bagel sandwich is making sure you have a good vegetable – spread – bagel ratio. Bagels can be so big and filling so I like to add a generous amount of smoked salmon spread and plenty of veggie layers to balance out the bagel taste. I sometimes even add a light drizzle of extra-virgin olive oil over top of my veggies.
The result….is pretty amazing. Crisp veggies with creamy salmon spread on a toasted bagel is something I don’t mind eating any day of the week.
- bagels (of your choice), sliced in half and toasted
- Smoked Salmon Spread
- baby spinach
- tomatoes, sliced
- cucumbers, sliced
- avocado, sliced
- cilantro leaves
- salt & pepper
- Spread smoked salmon cream cheese generously on both sides of the bagel.
- Layer the vegetables in any order you like.
- Season with salt and pepper. Enjoy!
