I usually like to start off the week with a hearty meal that you guys can whip up during the week but today I’m shaking things up a little different. Instead, I’m going with an easy treat/snack/dessert that you can make in like 5 minutes! It’s a perfect balance of creamy + fresh + chocolate + crunch.
Creamy Berry, Coconut, and Chocolate Bowl has been my go to for the last couple weeks when I’m craving something a little sweet. This little dessert bowl is so simple that it’s kind of funny but it works for me and hopefully you guys will love it too! We’ve been trying to eat a little healthier in the house and staying away from refined sugars or artificial sweeteners as much as we can. So fresh fruit + yogurt has been my best friend.
I combined Greek yogurt + cottage cheese to serve as a base, topped it off with fresh berries, chocolate chips, coconut chips with plenty drizzles of honey. You have the creaminess from the yogurt, plenty of freshness from the berries with whole lotta crunch from the coconut chips (which I recently discovered and loving on so much – where has it been?!) with a little chocolate kick and just enough sweetness from the honey.
You can pile on as much or as little toppings as you like but don’t skimp on those coconut chips. They are seriously just so amazing and add a delicious crunch to this simple yet delicious bowl! Which BTW you can totally have for breakfast too.
- 1 cup 2% cottage cheese
- ½ cup 2% greek yogurt
- fresh berries (assortment of your choice)
- chocolate chips
- coconut chips, crushed (I've been loving this brand. It's honey flavored with no weirdo ingredients (yeay!)
- In a small bowl, combine the cottage cheese with yogurt. Spoon equally into two serving bowls.
- Top with fresh berries, chocolate chips, coconut, and drizzle with honey.
