  • 1 (11 oz.) can mandarin oranges, drained well
  • 1/2 bunch fresh cilantro, chopped, about 1/2 cup
  • 1 bunch green onions, sliced
  • 1/2 cup roasted peanuts, roughly chopped

Dressing

  • 1/4 cup creamy peanut butter
  • 1 Tbsp. fresh lime juice
  • 2 Tbsp. low-sodium soy sauce
  • 2 tsp. honey
  • 1 tsp. grated ginger
  • 2 garlic cloves, minced
  • 1/2 tsp. sesame oil
  • 1/4 tsp. red pepper flakes, plus more to taste
  • 24 Tbsp. water

Instructions

  1. In a large deep salad bowl, combine the salad ingredients and set aside.

Dressing

  1. Whisk together the dressing ingredients, adding water as needed to thin out the dressing until desired consistency. Season with salt and pepper to taste.
